Wet:
1 cup oatmeal
1 1/2 cup plain yogurt or sour milk or buttermilk
1 1/2 tsp. soda
Combine plain yogurt and soda first. Add these ingredients together and let sit for about 5 minutes.
Then add:
1/2 cup oil
1/2 cup maple syrup
1 egg
1 tsp. vanilla
Dry:
1 cup spelt flour
1/2 cup unbleached flour
2 tsp. baking powder
1/4-1/2 tsp. salt
Add 1/2 – 3/4 cup blueberries to dry ingredients and cover with flour mix.
Mix wet and dry and bake 375 degrees for 20 minutes.
