Cranberry-Lemon Muffins

Wet:
3/4 cup plain yogurt
1/3 cup oil
1 egg
2 tbsp. lemon juice
2 tsp. lemon zest
1 tsp. vanilla
(1/2 cup maple syrup) ~ if no maple sugar available

Dry:
1 cup white flour
1/2 cup spelt flour
1/2 cup cornmeal
2 tsp. baking powder
1 tsp. soda
1/4 tsp. salt
1/2 cup sugar (preferably maple sugar)
1/2 cup craisins

Combine wet and dry until moistened.
Bake at 400 degrees for 20 minutes.
