Wet:
1/4 cup oil
2 eggs
1/2 cup plain low fat yogurt
3/4 cup maple syrup
3/4 cup oatmeal
Combine and let stand 5 minutes.
Dry:
1 1/4 cup whole wheat flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Topping:
1/4 cup whole wheat flour
1/4 cup brown sugar or maple sugar
2 tbsp. butter
Nuts
Combine wet and dry ingredients – just until blended. Pour into muffin pan.
Bake at 350 degrees for 25 minutes
Cover with topping. Drizzle with maple syrup.
